One fun thing about buying beef by the half or mixed quarter is the opportunity to play with cuts you might never have had before. These tacos are made from tongue! Now, if you don’t want the tongue, you can opt to have it discarded, as most people do with their “offal and oddbits.” But if you choose to keep it, it’s basically free meat and it can be fun to experiment with.

I tried this recipe by a chef that specializes in dealing with these odd cuts and found the end result very tasty. I made it a second time and added some cumin and chili powder in during the final browning stage because those spices just “make” Mexican food for me.

If you have guests over, they might appreciate a bit of mystery. You could introduce the dish with the Spanish title used for the recipe here, tacos de lengua. And be aware that this particular cut is very rich so you might want to serve it with some lighter sides, like rice.
